A Frenchman in Aberdeen...
I am French and have lived in Scotland for 10 years now. Worked in Aberdeen Hotels for a number of years now namely Maryculter House Hotel prior to joining Palm Court Hotel in Summer of 2008. Food plays a massive part of the Palm Court Hotel with events ranging from all types of celebrations ( weddings, anniversaries, birthdays,christenings, reunions) , corporate meetings and events, funeral teas to name but a few. In addition the Bothy Restaurant and Bar serves all day meals from breakfast, all day lunch and dinner. The main challenge as the hotel for the kitchen is both the volume and short lead in time for business.
My main passion is baking including bread, brioche, croissants which I often do in the hotel when get the chance. Phrase ' I liked to be soaked in Sugar'
Growing the business at the Hotel is forever happening through dedication in getting the business right and give as much flexibility to events as possible. Simple things like writing the Bride and Grooms names on the plates for deserts are really pushing the memorable occasions through the hotel. The main USPS for the myself and brigade are to ensure good communication with sales ensuring we can keep protecting and growing
Out of work my interests include Rugby and Snooker.
