In the six months I have been back in my spiritual homeland of Scotland, I feel like I have hardly stopped for breath! Even after travelling the world, Scotland is the one place that always feels like home to me
It has been a pleasure to re-aquaint myself with the wealth of produce this little nation has to offer, and to be able to take advantage of the amazing season produce we have from the Highlands to the Islands. What a difference to the Carribean Islands where I spent the last 10 years! I suppose their weather makes up for it a bit though...
All this fantastic meat, fish, dairy and vegetables really inspire me to create menus and dishes that will hopefully excite you as much as they excite me. I'm really looking forward to showing our guests what a wonderful variety of flavours and styles we will be demonstrating through our daily specials, speciality nights and one-off events. Our spring A La Carte Menu will be available very soon, and I hope you have the chance to visit soon and sample Scotland's finest brought to the table.
